I have always been a fan of cornbread or Johnny Cake as we like to call it. But the reality is it tends to be dry. So the other night I mixed a couple of recipes together, crossed my fingers, put it in the oven, and was pleasantly surprised a delicious, lightly sweetened, tender and moist cornbread. Here is my creation, enjoy:
Moist Johnny Cake
1 c. cornmeal
1 1/2 c. flour
1 1/2 Tb. baking powder
1/2 tsp. baking soda
1 tsp. salt
1/4 c. sugar
1/4 c. honey
2 eggs
1/2 c. milk
1 1/2 c. buttermilk
1/4 c. oil
Mix together and bake in greased 9x13 pan.
